The fruit comes from roughly 40 year old Chenin Blanc vines on flinty (silex) soils, gently pressed and given a short vinification in stainless steel, with no malolactic fermentation so the natural acidity stays razor sharp. Bottled the spring after harvest, it's about purity and tension rather than weight.
