The balance of the wine was fermented cool to retain the fruit characters from our vineyards

and the tannins ride gently just below the fruits

We don’t allow the wine to go through Malolactic fermentation (we don’t want a buttery style of Chardonnay) so the wine retains a crisp acidity

The elevation of these sites give the wine a more natural acidity and provide a natural lively fine-bone profile

and it still holds a special place in their collection
